Top Secret Family Recipe - CHEEZ-IT Chicken

Years ago, Leigh's Dad came up with this delicious tasty dish that has become one of our family's favorites - CHEEZ-IT Chicken.  We absolutely love it and finally took the time to put the recipe together.

































It is a great week night favorite and takes about an hour from start to finish.

CHEEZ-IT Chicken   Makes 4-5 servings

3-4 Chicken Breasts (slice each breast into thirds to make strips)

1 1/2 cups crushed CHEEZ-ITs (measured after crushing)

1/2 cup flour

Tony Cachere's Creole Seasoning to taste (I use about a teaspoon)

1 cup milk

1 egg

3/4 stick of butter or margarine


Preheat oven to 350°. Melt butter and pour into 9 x 13 glass pan.  Place CHEEZ-ITs into ziploc sandwich bag and crush with a rolling pin.  Pour CHEEZ-IT's into measuring cup until you reach 1 1/2 cups.  Add 1/2 cup flour.


Add Tony Cachere's seasoning and stir.  Dump mixture on to a paper plate.  In a shallow bowl, mix milk and eggs.  One by one, dredge chicken pieces in milk mixture, then coat with CHEEZ-IT mixture.  I've found it easiest to press the chicken down in to the mixture with a fork, then turn the piece over and repeat.  This helps the mixture stick to the chicken.

Place coated chicken into pan, bake approximately 40 minutes until the coating is crispy.



That's it!!! And let me tell you, it is super delicious! There is always a fight over the crispy, yummy crumbs left in the bottom of the pan too! Leigh's Dad only made the mistake of cleaning out the pan once, and now knows that his life will be shortened if he does that again!!!!

Chicken Tamale Pie


Sorry we've been such losers and haven't posted in a while...here's something super yum yum! Enjoy!


Chicken Tamale Pie by Pinch of Yum

Ingredients:

⅓ cup fat free milk
¼ cup egg substitute (we used 1 egg)
1½ tablespoon taco seasoning, divided
¼ teaspoon ground red pepper
1 (14¾ ounce) can cream-style corn
1 (8.5 ounce) box corn muffin mix (we used Jiffy)
1 (4 ounce) can chopped green chiles
1 (10 ounce) can red enchilada sauce
2 cups shredded cooked chicken breast
¾ cup shredded cheese (She recommends white cheese, we used shredded Mexican blend because that's what we had and it was delicious)
Cilantro for topping (we love cilantro!)

Directions:

1. Preheat oven to 400°.

2. Combine the first 7 ingredients (milk through green chiles), using just ½ tablespoon of the taco seasoning, in a large bowl, stirring just until moist. Pour mixture into a round pie plate coated with cooking spray.

3. Bake at 400° for 20-30 minutes. While corn is baking, toss the chicken in the remaining 1 tablespoon taco seasoning. When corn is done – it will be just barely set and golden brown – pierce entire surface liberally with a fork (it might stick a little bit to the fork). Pour enchilada sauce over top. Top with chicken; sprinkle with cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces. Top with cilantro.

I'm sorry that I didn't get many more pictures, but it is was demolished pretty darn fast!

My Latest Obsession - Rhonna Designs App

Lately on Instagram, I've been seeing all these beautiful photos with lots of amazing word graphics and details. I searched around and found out that it is an app available for Iphone and Android, named Rhonna Designs App.  It is completely amazing and only cost $1.99 !!!  I'm just loving it!

Can you tell that I'm in LOVE with this app? I absolutely love the graphics that she has included along with the fonts and frames.

Boo to the Flu! and a Repost of our Sweet Valentine Owls

Sorry we have been MIA! I came down with the flu on New Year's day just in time to get out of helping Leigh move home.  Sorry to say, but I would have much rather helped her move than had the flu.  I had every symptom that you hear about - you name it and I had it. Not only that but I still feel like someone stole all my energy. :(

That being said, I thought we would share a post from last year for Valentine's Day. We originally found these Adorable Valentine Owls by Happy Clippings  Our version is slightly different since my heart punch was a little smaller than the ones they used and mine are a little goofier - kinda like me!

I apologize in advance for the poor picture quality.  Since I'm always at work during daylight hours it is just really hard to get a good picture!

These are so simple to make and would be a great Valentine craft for kids to make.

Here's the list of supplies you need - 

1.  Toilet Paper Rolls
2.  Scrapbook Paper - Patterned, Red Solid, White, Orange - I used my scrap stash
3.  Ribbon or String for the hanger
4.  Googly eyes
5.  Heart Punch
6. Spray Glue
7. Glue Gun
8.  Small Heart Stickers

Directions - 

1.  Cut your paper about 1/4 inch larger than your TP Roll.
2.  Cover back side in spray glue and adhere to TP Roll.
3.  Cut length of string for the hanger. I tied a knot in one end and inserted it into the roll before you make the ears.  The knot will be captured inside so there won't be any need for glue.
4.  Press down on the top of the roll on one side and then the other to form the ears.
5.  Cut a small triangle from orange paper for the nose and glue it on to the owl.
6.  The eyes are 2 small circles on top of two larger ones with the googly eye in the middle.  I used punches, but you could easily cut these by hand.
7.  The wings are heart punches - 2 on each side
8.  Add a tiny heart sticker and you're done!
