Easy Restaurant Style Baked Potatoes

Ok, if you don't know by now, I'm an extremely talented, creative, boring and LAZY cook.  Recipes to me shouldn't have more than about 5 ingredients and they should all currently reside in my pantry or fridge.

I can't remember where I saw this idea, but we've been baking potatoes like this forever.

Easy Restaurant Style Baked Potatoes

     Ingredients:   Baking Potatoes     Olive Oil      Sea Salt

 (Regular salt is fine too - I only have Sea Salt because my Mom gave it to me!)

Wash potatoes, prick lightly 2 or 3 times and cook them in the microwave for about 1/2 the time you normally would.  I cooked 3 fairly large ones for 10 minutes in the microwave.  You want to be able to feel a little give in the potato but not so much you can break the skin.

Remove from the microwave - CAUTION - They will be HOT!  Then brush them will Olive Oil and sprinkle with salt.  Bake in the oven at 375 degrees for 20-25 minutes - not necessary to wrap them in tin foil - although I usually cook them on a piece of foil for easy clean up.  That's it!


They come out light and fluffy and the best part about potatoes baked this way is the skin - YUMMY!

  2. I usually do mine with oil and sea salt, but never tried microwaving first...thanks for the tip! I'll try that this week.

  3. my oven was already set to 450 about how long would you cook them then i am figuring about 15 mins because the potatoes were very large

    1. I would check them at 10 minutes and then see how much longer you might need. 15 would probably do it. Thanks for dropping in!

  4. I've pretty much always cooked my baked potatoes in the microwave first, before going in the oven (with oil and salt). The only problem is that the skins are not quite as crispy and firm when they are finished. My Mom used to bake potatoes completely in the oven and she always had a really firm, crispy skin. We always saved our skins for last and ate them with butter. They were the best.
