Roasted Cabbage

I've noticed that about 90% of my posts start of with "Saw this on Pinterest" - is that a bad thing?  My neighbor's husband thinks "Pinterest is from the Devil".  LOL!!! That's because his wife keeps him busy with Pinterest projects, poor guy!

So, here's my latest Pinterest inspired project!!

This is a recipe from Martha Stewart and it is super easy and delicious.

Roasted Cabbage Wedges

1 tablespoon plus 2 more tablespoons extra virgin olive oil
1 medium head of cabbage cut into 1"slices
Coarse salt and ground pepper
1 teaspoon caraway or fennel seeds (I didn't have either and used celery)

Preheat oven to 400 degrees.  Brush a cookie sheet with 1 tablespoon of olive oil and place cabbage slices on baking sheet.  Brush tops with remaining oil and season with salt, pepper and your choice of seeds.  Bake for 35 minutes until cabbage is tender.



The only thing I think I would do differently is to add some bacon!  Everything is better with Bacon!

    1. I think it would be delicious with corned beef! I made more last night, took some to the office to share and ate some tonight with sausage. I love the name of your blog as I too, treasure my time away from the office chair and love sharing it on our blog! I'm your newest follower too!
